Ingredients

  • 1 pound extra-lean ground beef, browned and drained
  • 2 cans (10¾ ounces each) tomato soup
  • 1 can (14–15 ounces) diced tomatoes, undrained
  • 2 cups broth (chicken, beef, or vegetable)
  • 2 bell peppers, chopped (green and red work beautifully together)
  • 1 medium onion, chopped
  • 1 tablespoon Italian seasoning
  • 1 package (5–6 ounces) Spanish rice mix, uncooked
  • Grated Parmesan cheese, for serving (optional)

Method

  1. This is the kind of recipe that doesn’t rush you — and doesn’t need watching.
  2. Brown the Beef: In a skillet or directly in a multi-cooker, brown the ground beef until fully cooked. Drain off excess grease. This step builds flavor and keeps the soup from becoming oily.
  3. Build the Soup Base: Add the cooked beef to your slow cooker along with: Tomato soup Diced tomatoes (juice included) Broth Chopped bell peppers Chopped onion Italian seasoning Stir everything together gently until well combined.
  4. Slow Cook: Cover and cook on LOW for 3 to 4 hours , until the peppers and onions are soft and fragrant. Your kitchen will smell incredible by this point.
  5. Prepare the Rice Separately: Cook the Spanish rice according to the package directions. Most mixes require water and an additional can of diced tomatoes — follow the instructions exactly. Cooking the rice separately keeps it from becoming mushy and lets you control the texture.
  6. Combine and Finish: Stir the cooked rice into the soup. Cover and cook on LOW for another 30 minutes , allowing the flavors to blend together.
  7. Serve: Ladle into bowls and top with grated Parmesan cheese if desired. Serve hot with bread, crackers, or a simple side salad.
