Green Chile Stew With Shredded and Potatoes

New Mexico Green Chile Stew with Shredded Pork and Potatoes

Introduction

A true Southwestern classic, New Mexico Green Chile Stew is the ultimate cozy bowl. It combines tender, melt-in-your-mouth shredded pork shoulder with golden potato cubes simmered in a rich, flavorful broth laced with roasted green chiles, garlic, and savory spices.

The master secret to authentic depth is using roasted Hatch green chiles (fresh or frozen) along with a brief braise for the pork shoulder before shredding. As the potatoes simmer directly in the chile-infused broth, their natural starches thicken the stew into a velvety, warming gravy without requiring heavy thickeners.

Ingredients

  • The Protein:
    • 2.5 to 3 lbs Pork Shoulder (pork butt), cut into 2-inch chunks
    • 1 tablespoon Vegetable Oil
    • 1 teaspoon Salt and ½ teaspoon Black Pepper
  • The Aromatics & Chile Base:
    • 1 large Yellow Onion, diced
    • 4 cloves Garlic, minced
    • 1 ½ to 2 cups Roasted Green Chiles (Hatch or Anaheim), peeled, seeded, and chopped
    • 1 teaspoon Ground Cumin
    • 1 teaspoon Dried Oregano (preferably Mexican oregano)
  • The Liquids & Potatoes:
    • 4 cups (1 quart) Chicken Broth or Low-Sodium Beef Broth
    • 1 ½ lbs (about 3 large) Russet or Yukon Gold Potatoes, peeled and cut into ½-inch cubes
  • Garnish & Serving:
    • Warm flour tortillas
    • Fresh cilantro, chopped lime wedges, and optional shredded Monterey Jack cheese

Equipment Needed

  • Large Dutch Oven or Heavy Stockpot
  • Tongs & Slotted Spoon
  • Two Forks: For shredding the pork.

Time & Servings

  • Prep Time: 20 minutes
  • Cook Time: 1 hour 40 minutes
  • Total Time: ~2 hours
  • Servings: 6 to 8 hearty bowls

Step-by-Step Instructions

1. Sear the Pork

Heat the vegetable oil in a large Dutch oven over medium-high heat. Season the pork shoulder chunks with salt and pepper. Working in batches to avoid crowding, sear the pork until browned on all sides (about 3–4 minutes per side). Transfer the seared pork to a plate and set aside.

2. Sauté the Aromatics

Turn the heat down to medium. Add the diced yellow onion to the pot with the remaining rendered pork fat. Sauté for 4–5 minutes until soft and translucent. Add the minced garlic, ground cumin, and dried oregano, stirring for 1 minute until fragrant.

3. Simmer and Shred the Meat

Pour in the roasted green chiles and chicken broth, scraping up any browned bits stuck to the bottom of the pot with a wooden spoon. Return the seared pork chunks and any accumulated juices to the pot. Bring to a boil, then reduce heat to low, cover with a lid, and simmer gently for 1 hour, or until the pork is fork-tender.

Remove the pork chunks from the broth onto a cutting board. Use two forks to shred the meat into bite-sized pieces, then return the shredded pork directly back into the simmering pot.

4. Add the Potatoes & Thickening

Dump the cubed potatoes into the pot with the shredded pork and chiles. Cover and cook on medium-low for 20–25 minutes, until the potatoes are completely tender when pierced with a fork.

Pro Tip for Extra Body: Lightly crush a few potato cubes against the side of the pot with the back of a wooden spoon and stir them back into the broth to naturally thicken the stew to perfection.

5. Season and Serve

Taste the broth and adjust with additional salt or pepper if needed. Ladle hot into deep bowls and serve with warm flour tortillas, a squeeze of fresh lime juice, and chopped cilantro!

Slow Cooker Adaptation

  • Sear the pork and sauté the onions/garlic on the stovetop, then transfer everything (except the potatoes) into a 6-quart slow cooker.
  • Cook on LOW for 6–7 hours (or HIGH for 3–4 hours).
  • Stir in the cubed potatoes during the last 1.5 to 2 hours of cooking until tender, then shred the pork and serve.

Storage Instructions

  • Refrigeration: Like most stews, this tastes even better the next day as the green chile flavors meld. Store in an airtight container for up to 4 days.
  • Reheating: Warm on the stovetop over medium-low heat with a tiny splash of broth or water if the potatoes have absorbed extra liquid overnight.
